Recipe 1: Winter Main Course

Pan-fried salmon on winter root vegetables with honey and thyme glaze

Ingredients (for 2 people)

For the salmon:

  • 2 salmon fillets (approx. 150-180 g each, with skin)

  • 1 tbsp honey

  • 1 tsp Dijon mustard

  • 1 tbsp lemon juice

  • 1 tsp fresh thyme

  • Salt & pepper

For winter vegetables:

  • 2 carrots

  • 1 small parsnip

  • 1 small sweet potato

  • 1 red onion

  • 1 tbsp olive oil

  • Salt, pepper

  • Optional: a little rosemary


preparation

  1. Preheat oven to 190°C .

  2. Roughly chop carrots, parsnips, sweet potatoes and onions, mix with oil, salt, pepper and rosemary.

  3. Place the vegetables on a baking sheet and roast for 25–30 minutes .

  4. During this time, prepare the glaze: mix honey, Dijon mustard, lemon juice and thyme.

  5. Season the salmon with salt and pepper, then briefly sear the skin side in a hot pan.

  6. Pour the glaze over the salmon and place it in the oven with the vegetables for the last 10 minutes .

  7. Serve everything – preferably with a squeeze of fresh lemon.

  • 200 ml freshly squeezed orange juice

  • 1 cinnamon stick

  • 2 slices of fresh orange

  • 2 carnations

  • 1 small piece of ginger (optional)

  • 1 tsp honey or maple syrup


🔥 Preparation

  1. Gently heat the juices in a small saucepan.

  2. Add cinnamon, cloves, orange slices and optionally ginger.

  3. Let everything steep for 10 minutes – do not boil.

  4. Stir in honey or syrup.

  5. Serve hot and enjoy.
